With backgrounds in the science of flavours and fragrances, co-founders David and Fiona De Vries spent over 20 years operating a flavour and fragrance manufacturing company before retiring to the Murray River. It was there they fell in love with gin, its balance, its botanicals, and its endless potential for creativity.

They immersed themselves in the craft of distilling, blending their technical expertise with a deep appreciation for tradition and innovation.

The Science of Passion
David’s expertise in essential oils and perfumery laid the foundation for Echuca Distillery’s unique flavour profiles. His earliest memories of gin stem from his parents’ love of Jenever (genièvre), the traditional Dutch and Belgian spirit from which gin evolved. Today, that inspiration lives on in every bottle we produce — a fusion of art, science, and pure passion.

Today, Echuca Distillery remains a family-driven venture. The business is proudly carried forward by Peter and David De Vries, sons of the original founders, who continue to build on their parents’ vision with the same dedication to quality and innovation. Together, they honour the past while shaping a bold new future for Echuca Distillery, one bottle, and one spirit, at a time.
