Under the guidance of our co-founder and head distiller, the Echuca Distillery crew draw on decades of flavour science, botanical exploration and regional craft to bring truly distinctive spirits to life. Through constant curiosity and collaboration, they turn raw ingredients into refined character, with spirit, skill and heart.

Meet The Team
Peter
Joined the Distillery in 2021 and is now Head Distiller. Before joining the Distillery, Peter had a passion for brewing homemade beer. Which has been well suited to adapting the knowledge to Fermenting Agave and Whisky washes for our spirits. Since joining he has also completed a Diploma in Distilling with the CIBD.
David
David joined the Distillery in 2022. He is Head of Operations and oversees our regulatory requirements. For the last 10 years, David has worked for an international food and chemical importer in their Regulatory department. Using this experience, he is heading up operations and will oversee our regulatory requirements.
