At Echuca Distillery, we combine traditional distilling methods with modern innovation to create gins that are pure, vibrant, and full of personality. From the choice of base spirit to the final bottling, every step is guided by craftsmanship and passion.

1. The Base Spirit
Every great gin begins with a clean, neutral base spirit. At Echuca Distillery, we use a locally sourced Australian grain or grape spirit as the perfect blank canvas for our botanicals. This foundation ensures each layer of flavour shines through with clarity, creating a smooth and balanced spirit ready for distillation.

2. Selecting & Infusing Botanicals
Next, we choose our botanicals, the heart and soul of every gin. From traditional ingredients like juniper, coriander, and citrus peel to native Australian botanicals such as lemon myrtle and pepperberry, each element adds depth and personality. Depending on the recipe, these botanicals are either steeped directly in the spirit or placed in a vapour basket to gently infuse their flavours.

3. Distillation & Flavour Capture
With botanicals in place, the distillation begins. Using copper stills, we heat the spirit to carefully capture the essential oils and aromas of each botanical. By precisely cutting the “heads,” “hearts,” and “tails” of the distillation run, our distillers ensure only the purest, most flavourful spirit makes it into the bottle, resulting in a gin that’s refined, aromatic, and unmistakably Echuca.

4. Bottling, Resting & Storytelling
Once distilled, some gins are rested or lightly matured to develop further complexity. The final product is bottled on-site at our Echuca distillery, ready to be enjoyed neat, with tonic, or in your favourite cocktail. Each bottle represents more than craftsmanship, it tells the story of place, passion, and the people behind every pour.
